After soaking in water for 12 hours, mung bean seeds absorb water by osmosis and become swollen because water moves from the dilute surroundings into the more concentrated cell contents. When these swollen seeds are placed in a concentrated salt or sugar solution, the outside solution becomes more concentrated than the cell contents. As a result, water moves out of the seed cells by osmosis, called exosmosis. Due to loss of water, the seeds shrink and become wrinkled, and their germination may slow down or stop because the cells do not get enough water for growth.
